In the spring of 2025, the restaurant at the Dolce by Wyndham Versailles – Domaine du Montcel offers a completely redesigned menu, true to its philosophy of combining high gastronomic standards with accessibility, refinement and conviviality. Under the leadership of chef Benoist Rambaud, the season is celebrated through a reinvented French cuisine, sensitive to market produce and the richness of the local terroir.
When Yvelines becomes a land of inspiration
Opened in September 2024, the place has quickly established itself as one of the most notable gastronomic addresses in the Yvelines region. At its heart is a spirit of dialogue between French culinary heritage and a contemporary vision of the table. In a cosy setting inspired by the famous Jouy canvases, overlooking a listed English garden, guests are invited to enjoy a timeless gustatory interlude.
Local produce revisited by Benoist Rambaud
The spring menu is built around generous, inventive compositions. The chef’s experience, gained in renowned establishments such as Le Laurent and Trianon Palace, is evident in his quest to reconcile depth of taste with lightness of execution. On Sunday April 20, La Toile is offering an exceptional Easter brunch for €90, including a glass of Champagne. Children benefit from a 50% discount, with access to fun activities and entertainment. For guests staying at the hotel, the reservation of a second brunch is offered, making the experience even more generous. An egg hunt will also take place on April 20 and 21, to make this weekend a real moment of sharing in the green.
