Le Feuillage earns its first Michelin star

The Michelin Guide 2025 has just awarded young Alsatian chef Jean-Paul Acker his first star for his restaurant Le Feuillage, nestled in the prestigious 5* Hotel La Cheneaudière & Spa in Colroy-la-Roche. A distinction that honors a refined cuisine d’auteur, rooted in its terroir and driven by a true team spirit.
A native of Colmar, Jean-Paul Acker cultivates a demanding and sincere commitment, drawing on his Alsatian heritage to imagine plates that are elegant, daring and respectful of nature. His tasting menu features seasonal vegetables, sublimated with touches of pure creativity, as exemplified by his astonishing white radish glazed with Alsatian horseradish, or the pre-dessert fennel in syrup and lemon-tarragon sorbet.
But this success would be nothing without the collective that revolves around the chef: from the dishwasher to the sommelier, not forgetting the local producers, every link in the chain participates in this gastronomic adventure, now rewarded with a star. “This star is for the whole team,” confides Jean-Paul Acker with emotion.
Le Feuillage’s philosophy is based on a naturalist approach, rigorous respect for the seasons and an unconditional love of local produce. A refined, precise culinary approach, always driven by the desire to share an emotion or a memory.
The establishment is now entering a new era: from April 2025, guests will be able to discover a renovated dining room, designed as an immersive, multi-sensory experience. The “Table Experience”, combining high gastronomy and technology, promises an exceptional moment for enlightened connoisseurs.
The chef’s career path mirrors that of his cuisine: patient, structured and sincere. After an apprenticeship in Alsace, he trained at Le Prieuré in Villeneuve-lès-Avignon, then at L’Oustau de Baumanière with Glenn Viel. Returning to La Cheneaudière in 2021, he took over the reins of the kitchen, and in 2024 was awarded the title of “Grand of Tomorrow” by Gault&Millau.
With Le Feuillage, Jean-Paul Acker has established his name among the greats of French gastronomy.
