Baratruf lands in the Marais

A truffle bar in the Marais? Yes, and it doesn’t do things by halves.

Located a stone’s throw from Place des Vosges, Baratruf is the very first truffle bar in the capital. At the helm is Pierre-Ivan d’Arfeuille, aka Piv, a passionate truffle grower from Burgundy. He grows his truffles in Pignol, on a family estate where over 1,500 trees have been planted with respect for the terroir. Local, committed production, fully controlled from tree to plate.

This unique counter pays tribute to the Burgundy truffle, long overshadowed by its famous Périgord cousin. Yet it has nothing to envy it: intensity, subtle aromas, ideal ripeness… It’s all there. To preserve its flavour, Piv adopts its own technique: infusion in a fatty substance, deep-freezing when fully ripe, then gentle thawing to release the flavours at the perfect moment.

Refinement without snobbery

Baratruf’s ambition is clear: to democratize an exceptional product, without sacrificing quality. Here, truffles are used where they are least expected: on creamy burrata, in delicate carpaccio, in comforting focaccia, and even melted into truffled Vache qui Rit. A bold, assertive choice that breaks the codes of a gastronomy that is all too often elitist.

And to accompany this festival of flavors? A glass of Burgundy wine, of course, but above all a revisited spritz, the signature of the place. Baratruf offers some thirty different versions (!), all drawn on draught. Aperol and Campari become almost anecdotal in the face of a menu that revisits this cocktail in truffled territory.
