A not-to-be-missed Michelin-starred dinner in Sologne
On April 5, La Borde en Sologne – Château & Spa will host an exceptional gastronomic event: a six-hand dinner featuring three chefs with starred backgrounds and deep roots. At the invitation of Romain Matura, chef of the restaurant Mémoire, Thomas Boullault and Jean-Pierre Vigato will be on hand to celebrate a region they hold dear: Sologne.
An ode to terroir, between elegance and memory
There’s nothing insignificant about the location. La Borde in Sologne, a listed jewel, is a 17th-century château that Anabelle and Jean-Marie de Mourgues have skilfully reinvented. Combining contemporary design with respect for heritage, they have breathed new life into the château, without ever betraying the soul of the place. The “Mémoire” restaurant, a veritable gastronomic showcase, celebrates daily the produce of the kitchen garden, the recipes of childhood, and the aromas of a region that is sometimes little-known, but rich in promise.
Thomas Boullault: back to basics
A Michelin-starred chef at L’Arôme in Paris since 2007, Thomas Boullault is a native of the region. He returns to Sologne not to put down his knives, but to share a moment of culinary transmission and creation, true to his philosophy of seasonality, sustainability and precision. His signature dishes – veal sweetbreads with morel mushrooms, smoked potatoes with caviar – bear witness to a respectful, refined cuisine that never stands still. ” The best dishes are made in season,” he likes to remind us.
He will be joined by Jean-Pierre Vigato, another respected figure in French gastronomy, who will bring his generous vision and local sensibility to the table, as he too is deeply attached to Sologne, his adopted home.
A dinner of complicity
This six-handed dinner promises more than a culinary performance: it’s a declaration of love for the land, its flavors and textures. In a dining room featuring Versailles parquet flooring, designer ceiling lights and sleek tablecloths, guests will experience a timeless evening of elegant gesture and sincere taste.
On April 5, 2025, Sologne will shine in the light of three talents united around the same sacred fire. A rare event, to be experienced as an engraved memory, in the image of the restaurant’s name: Mémoire.
