Chamboule: the new artisan bakery that’s setting Montmartre on fire

Chamboule, a gourmet address that focuses on authenticity and homemade food, right in the heart of Paris’s 18ᵉ arrondissement.

Montmartre welcomes a new culinary nugget with Chamboule, an artisan bakery that’s shaking things up with its sourdough bread, homemade pastries and warm ambience. Located at 54 rue Custine, just a stone’s throw from Sacré-Cœur, the shop, which opened in January 2024, has already won over local residents.

A project driven by passion

Behind this bakery is Gary Kurtz, a former financier turned artisan baker. After training at Ferrandi and obtaining a bakery CAP, he made his dream come true by opening Chamboule, a place where quality and transparency are the watchwords. Here, everything is homemade, from organic bread to flaky pastries made with PDO butter.

Exceptional breads and original creations

Chamboule offers a selection of sourdough breads, made with organic and ancient flours (khorasan, buckwheat), and long fermentations for optimal taste and digestibility. Its signature bread, Chamboule, is available in plain or seeded versions, combining stone-ground T80 and T150 flours. Special breads are added to the range every weekend, with creations such as chestnut bread and bread with pink pralines.

Viennoiseries and pastries to die for

At Chamboule, we don’t use frozen products, but rather a tourier who shapes croissants, Swiss breads, cream rolls and shell flans every morning. The crispy puff pastry and generous recipes are already winning over gourmets. On the pastry side, the offer is short but effective: éclairs, apple tarts, Paris-Brest and other classics revisited with a modern twist.

More than just a bakery, Chamboule is a real meeting place. With its large, angled counter and inviting benches, the space invites you to relax over a coffee or a sweet. In summer, a terrace will complete this already unmissable address.
