Le Phalsbourg: a Parisian bistro, just the way we like it
Since July 2024, Le Phalsbourg has set up shop near Parc Monceau, offering authentic bistro cuisine accompanied by a remarkable wine list.
Nestled just a stone’s throw from Parc Monceau, Le Phalsbourg is the new place to discover for lovers of traditional French cuisine and exceptional wines. Due to open in July 2024, the bistro’s warm atmosphere, home-cooked dishes and carefully selected cellar of over 140 wines have already won it over.
An exceptional team at the helm
At the helm of Le Phalsbourg is young owner Matthieu Fève, only 25 years old, but with solid experience in prestigious Parisian establishments such as Les Botanistes, Le Ritz and Le Louchebem. A graduate of theÉcole Hôtelière Médéric and Ferrandi Paris, Matthieu pays particular attention to the quality of the products on offer, whether food or wine. He has been working with the same suppliers for 18 years, a guarantee of authenticity and consistency.
In the kitchen, Arthur Raveau, a chef with an impressive track record, officiates. Arthur has honed his skills alongside some of the world’s greatest Michelin-starred chefs, including Thierry Marx(Sur Mesure, Mandarin Oriental), Anne-Sophie Pic(La Dame de Pic), and severalAlain Ducasse establishments. Joining Le Phalsbourg from the outset, Arthur chose to return to a simpler but perfectly executed cuisine, paying homage to the cultural heritage of the traditional French bistro. At his side is Ahmed Kawsar, second de cuisine, with whom Arthur previously worked in Alain Ducasse’s kitchens at Spoon 2. Together, they form a creative duo, guaranteeing generous cuisine.
In the dining room, Archibald Franquinet, an experienced chef de rang who previously worked at the Dada Bistrot brasserie in Courbevoie, is at the helm. His expertise guarantees attentive service and excellent knowledge of the dishes and wines on offer.
Authentic cuisine and a warm welcome
At Le Phalsbourg, the menu constantly evolves with the seasons and the chef’s inspirations. The dishes, prepared entirely on site, feature fresh, high-quality ingredients, reviving the great classics of the Parisian bistro, without pretension, just what’s needed: savoir-faire. You won’t want to miss the Comté soufflé, the house’s signature starter, or even the sweetbreads with garlic purée.
The ambience is also just right: with its custom-designed bar, red banquettes and shelves lined with old cookery books and gourmet objects, the place exudes authenticity. At lunchtime, this lively place attracts a business clientele who take advantage of the 35-euro lunch menu. In the evening, it’s the locals who flock to the slate. It’s your turn to join this fine group of regulars. In summer, take advantage of the terrace, which doubles the restaurant’s capacity.
Privatization: a tailor-made offer for all events
Le Phalsbourg also offers the possibility of privatizing its spaces, with capacity for up to 50 guests. Whether for a family reception, a birthday party or a business event, the establishment guarantees a personalized experience thanks to a dedicated team.
