Mylo Levin, a new Chef at Burgundy Paris

Working alongside chef Christophe Saintagne, he honed his style: rigor, respect for the product and controlled creativity. This experience marked a decisive turning point in his culinary approach.
He then opened up to other influences by moving to Los Angeles, where he discovered Asian fusion gastronomy. On his return to France, he took charge of the kitchens at La Villa Calvi in Corsica, where he developed a local and responsible cuisine, highlighting local produce. In March 2024, he joined Le Burgundy as assistant chef before being promoted to executive chef. His approach is based on subtle, masterful combinations. His signature dish, scallops au naturel with bergamot and gin, illustrates his quest for balance between authenticity and creativity.
