For the 2024-2025 winter season, the 39V restaurant and the prestigious Maison Barons de Rothschild combine their expertise for a sparkling culinary and oenological experience.
Following the success of its ephemeral champagne bar this summer, Maison Barons de Rothschild is extending the experience. It is taking up residence in the heart of the 39V restaurant, nestled on the rooftops of Paris. This collaboration offers an exceptional opportunity to marry the creations of chef Frédéric Vardon with the exceptional champagnes of the House of Barons de Rothschild.
An exceptional gastronomic alliance
The program features a six-course menu, entirely designed to sublimate each champagne cuvée. Each dish is prepared according to market arrivals, guaranteeing impeccable freshness and quality. The experience begins with the Cuvée Concordia Brut, a grand vin d’assemblage with a majority of Chardonnay, and continues with the Blanc de Blancs.
Starters are enhanced by the prestigious Rare Collection 2013, a rare and limited cuvée. Main courses, whether featuring sustainably caught fish or white meat from local producers, are accompanied by Triptyque 2018. It is a true bridge between terroir and precision oenology. Finally, Edmond de Rothschild’s Brie de Meaux finds its perfect companion in the Cuvée Brut Nature. As for desserts, they are enhanced by the delicacy of the House’s rosé champagne.

Located on the 6th floor of a Haussmann building, 39V offers a breathtaking view over the rooftops of Paris. Revamped in 2021 by designer Raphaël Navot, this warm, intimate space is much more than a restaurant. A true haven of peace, it combines comfort with a convivial atmosphere, ideal for sharing a moment with loved ones.
With a capacity of 6 to 8 guests, the chef’s table is designed to offer a personalized experience. Champagne connoisseurs can savor every dish while discovering the secrets of the cuvées.

Founded in 2005, Maison Barons de Rothschild is the fruit of the union of three branches of the famous family. With a shared vision, they created an estate dedicated to the production of refined champagnes, marked by the elegance of Chardonnay and prolonged aging. The house’s cuvées are distinguished by their purity and finesse, perfectly embodying French savoir-vivre.
This exclusive experience is priced at €325 per guest for 6 people (including 6 bottles of champagne) or €295 per guest for 8 people (including 7 bottles). The price also includes water and hot drinks. A unique opportunity to discover the art of French living in an exceptional setting.
