Le Traîneau Enchanté: the Christmas log from Cheval Blanc Paris
For the festive season, Cheval Blanc Paris unveils an exceptional pastry creation, imagined by the restaurant’s head pastry chef, Maxime Frédéric. A fairytale log entitled “Le Traîneau Enchanté” promises to light up Christmas tables.
This gourmet work of art draws its inspiration from Maxime Frédéric’s childhood memories. The sleigh, made from 75% dark chocolate, glides elegantly over stylized snow. Inside, a richly flavored dessert combines vanilla rice pudding, almond ganache, mandarin confit and orange caramel. A vanilla cookie, reminiscent of the Normandy teurgoule of his childhood, completes this remarkably refined whole.
Beneath the sleigh, a crunchy bar of chocolate and rice evokes the texture of fresh snow. Every detail, right down to the floral curves of the sleigh, pays homage to the Art Nouveau architecture of Cheval Blanc Paris, located in the historic Samaritaine building.
Available in limited quantities for €220, this log is designed for 5 to 6 people. It can be pre-ordered on the Atelier des Créations de Cheval Blanc Paris website, with collection scheduled between December 20 and 25, 2024 at 8 quai du Louvre, in the 1ᵉʳ arrondissement.
