Delano Café by Thierry Marx: Maison Delano’s intimate Mediterranean address

Nestled on rue d’Anjou, discover Delano Café by Thierry Marx, the restaurant of Maison Delano Paris. This intimate address combines Parisian elegance with the warm spirit of a boutique hotel.

Thierry Marx and Paolo Minelli

In this intimate boutique hotel, cuisine takes on a special dimension. The magic happens thanks to the collaboration between Thierry Marx, renowned Michelin-starred chef, and Paolo Minelli, an Italian chef whose career is as brilliant as his benevolence. Trained in prestigious establishments such as the Louis XV in Monaco and the Park Hyatt Paris Vendôme, Paolo Minelli breathes a Mediterranean touch into a menu designed to highlight local, seasonal produce.

The Delano Café by Thierry Marx, located in the hotel’s inner courtyard, offers a unique experience. With its 200 m² of greenery, this space is designed to enhance moments spent at the Maison Delano. The interior rooms are delightfully decorated. Not to be missed? The bluish tiles in the open kitchen. Dishes such as green crab ravioli or pearly cod with coconut bean ragout combine delicacy and generosity, celebrating the richness of fresh produce. “These are simple recipes that can be found in good Parisian cafés.” Explains Paolo Minelli.

A sustainable approach at the heart of Maison Delano

Sustainability is an essential value for this duo of chefs. By favoring short circuits and promoting local producers, Delano Café offers cuisine that respects the environment. “It’s very important for us to value our suppliers. Without them, we’re nothing,” says Paolo Minelli with conviction, highlighting the importance of partnerships with market gardeners and farmers in the Paris region.

This eco-responsible approach is in line with a strong trend in the luxury hotel industry: according to a survey by the Accor group, 94% of customers attach importance to the ecological approach of establishments. A strategy that could become a major asset for Maison Delano.

Shopping Brunch: a new Parisian experience

Starting in December, Maison Delano innovates with its Shopping Brunch, an experience designed for Parisians and tourists alike. The idea? After a shopping spree in the chic Rue du Faubourg Saint-Honoré district, visitors can savor generous dishes in a cozy, refined atmosphere. Gourmet salads, shareable desserts and valet parking combine to transform a classic brunch into an exceptional moment. “I want them to have a smile on their face when they leave Maison Delano.” The chef confesses.

Maison Delano also stands out for its accessibility. Although luxurious, the establishment caters to a diverse clientele: professionals during the week, families at weekends, and even lovers of haute cuisine in search of something new. “We’re going to have families, children, it’s varied. That’s what we’re looking for.” This diversity reflects our commitment to inclusiveness, while maintaining high standards of excellence.
