Plum

Prunier is a century-old company specializing in caviar. It was in 1921 that Émile Prunier discovered the abundance of sturgeon in the French rivers of Gironde. He proposed an alternative to Russian caviar, and set up a production unit. He became France’s leading producer of this black gold. Four years later, he opened his eponymous “Prunier” restaurant on Avenue Victor Hugo in Paris, making the capital the world center for caviar.

Mosaics evoking shellfish and ripples, punctuated by marble and mahogany chairs. The Prunier restaurant, with its Art Deco setting, boasts historic monument status. Over the years, it has become a must for Parisian gourmets. In addition to their incredible fresh caviar, they also offer Balik salmon, tarama, king crab, oysters and other top-quality seafood. By making their prices more accessible, the house aims to democratize and introduce everyone to a new way of consuming this noble product.

Kaviari

For over 40 years, Kaviari has been selecting the finest caviars and seafood from the source. The grains are refined in our Paris laboratories, then packaged in numbered tins… Each tin contains the eggs of a single sturgeon! Each box is unique, a true invitation to gastronomy.

Created by Raphaël Bouchez and Jacques Nebot, Kaviari is a place for life and discovery. Housed in the company’s historic workshops, close to the Opéra Bastille, the Manufacture Kaviari has been converted into a warm, modern loft. Every Tuesday and Thursday, tastings are organized by Bruno Higos. Of course, it’s also possible to buy seafood products such as smoked salmon, crab, bottarga… and rarer delicacies like Palamos octopus or Devon crab.

Of course, it’s impossible to talk caviar without mentioning Caviar Kaspia! Founded in Paris in 1927, this luxurious restaurant of Russian specialties is the house that contributed to the rise of “Caviar Culture”. It has made its mark on all the most prestigious tables.

In the early 20th century, its caviar was tasted by the great names of theRussian aristocracy. Over the past 80 years, the famous Parisian institution created by Mr. Arcady Fixon has become a meeting place for the Jet Set.
